Only the bud and first two young leaves are plucked......

(For White Tea only the bud is used)

The area is a time warp - including the office.....

Firstly the new leaves have there humidity reduced to around 60%

These leaves are sitting on a screen and air is circulated from below....

These are the large fans used to generated the air flow....

(Heat can be introduced during the more humid monsoon season)
